Laverino is a small town of just one hundred inhabitants in the Marche mountains on the border with Umbria in the territory of the Municipality of Fiuminata. Right here, in the fertile soils lapped by the Potenza river, a bean that arrived in the Marches in the 16th century in the wake of the Spanish and Portuguese, like all the varieties of Phaseolus vulgaris, found its ideal habitat.
The seed is white, medium-small, slightly elongated and the plant can reach two or three meters in height. The delicate flavor and the very thin skin, which allows rapid cooking, are its most appreciated characteristics.
The Laverino bean is grown around 600 meters above sea level, in soils known as "canapine", because they were once dedicated to the cultivation of hemp. It is sown starting from 18 May (feast of San Venanzio) in postarella, planting four or five seeds per hole. The plant must lean on a stake: traditionally it climbs to a branch of ornello, a tree similar to the ash. The bean reaches full maturity in September and, from the first harvest, the seeds are selected and set aside for the following season.
After harvesting, the pods dry in the sun, then they are shelled and placed in wicker baskets under the sun for a few more days.
